A chef who has previously worked in some of the West Midlands' top kitchens and led a Hampton in Arden restaurant to Michelin Guide recognition is set to open a new venue. Stu Deeley,
the winner of MasterChef: The Professionals 2019, plans to launch The Warwick this summer, a restaurant situated within the grounds of the Mallory Court Country House Hotel in Leamington
Spa. Deeley is no stranger to hotel dining - his restaurant Smoke at Hampton Manor was listed in the Michelin Guide and earned three AA Rosettes before it closed its doors in March. READ

sourced from the Mallory Court kitchen gardens will be featured in dishes such as Cornish crab with Isle of Wight tomatoes, poussin with Asian influences and a Jamon sauce, and pea and mint
gazpacho with burrata and globe artichoke, reports Birmingham Live. The menu will also include the chef's signature dessert, an ever-evolving baked Alaska. Earlier in his career, Deeley
worked at Mallory Court and the Eden Hotel Collection before moving on to Simpsons and The Wilderness. He received his training at Halesowen College and continues to foster new talent
through the Stu Deeley Professional Chef Academy, arranging work experience placements for aspiring chefs. Stu expressed: "Coming back to Mallory Court feels like a full-circle moment
for me. It's a place with deep roots, not just in its history and gardens, but in the people - many of whom have been here for decades." He is also enthusiastic about the
possibilities, saying: "What really excites me is the potential. We have a bigger blueprint here than I've ever had before, and that opens the door to creating something truly
special." The chef added: "My focus is on classical flavour combinations, ingredients that speak for themselves, and food people genuinely want to eat - not just admire. I'm
not trying to reinvent the wheel, I just want to make it turn really, really well." The new venture, The Warwick, is set to open at Mallory Court Country House Hotel and Spa, Harbury
Lane, Leamington Spa, CV33 9QB on Wednesday, June 18.
