A Surrey chef who has worked alongside some of Britain's top culinary experts has launched his own burger business called Clucking Crispy Chicken this week.


Having spent the past 18 months perfecting his American fried chicken burgers testing and refining the combination of different types of gluten-free flours, spice and herb mixes and


accompanying sauces, Jonas Lodge from Woking discovered frying chicken twice like a triple cooked chip produces the tastiest results, and launched his delivery service on May 24.


Drawing on a 24 year culinary career which started under the guidance of Raymond Blanc at Brasserie Blanc in Oxford, Jonas went on to work with top chefs in the UK and Europe including


Spanish Michelin starred chef Sergi Arola, award winning Michelin starred Paul Heathcote and highly creative chef Heston Blumenthal.


Over the years, Jonas ran his own kitchen gaining two AA Red Rosettes for the Bell at Ramsbury which was also awarded the AA Pub of the Year in both 2017 and 2018.


When he went on to open his fine dining Restaurant GL50 in Cheltenham just months before Covid hit the country, he received a mention in the Michelin Guide from 2020 to 2023. Now, he is


excited to launch his new burger delivery business available to customers who place orders via Uber Eats, Deliveroo and Just Eat in Byfleet, Woking and Cobham.


As well as delivering burgers made with boneless chicken thigh in a southern fried buttermilk coating, in a brioche bun with homemade ranch dressing, he also sells fries, sweet potato fries,


dips, drinks and cookies. There are meal deals available too.


Chef Lodge said: "I am a chef who is passionate about creating memorable flavours which brings customers back wanting more. With the menu option I have created for Clucking Crispy Chicken,


it is not only the coating on the chicken which sets the taste buds tingling but also the sauces and various accompaniments that go with each.


"Having tested lots of different flours, I found the best for the coating was a mix of gluten free flours. Whilst the chicken is served in traditional brioche buns, we can also supply a


gluten free option.


"Customers can select chicken coated with a Southern fried buttermilk coating in a brioche bun with homemade ranch dressing to ‘The Special’ with butternut squash, chilli jam with bacon


miso, blue cheese and confit garlic mayo, ranch dressing and pickles.


"If you have a sweet tooth, I have also devised some delectable cookies made with 70% double chocolate, Ruby chocolate and rose petal or a gluten-free option with raisin, oat, vanilla and


walnuts.


"If people looking for something truly different than other home-delivery food options, there is only one way to find out how delicious my American fried chicken is and that is to place an


order.”

Clucking Crispy Chicken is available to order on Wednesday 5pm-10pm, Thursday 1pm-10pm, Friday 1pm-11pm, Saturday 1pm-11pm and Sunday 2pm-10pm via Uber Eats, Deliveroo and Just Eat.
